An Olive Jause

Once upon a time, there was a moderately fancy restaurant called Mulino 19, which had an overpriced but a rather enjoyable Brettljause. Now Mulino 19 is gone, and we have Severin instead, which looks exactly the same, is still moderately fancy and has a cheaper and less enjoyable Bioteller.

It was too dark to see what I was eating, and the flash of my phone was too brief for me to understand the ingredients, so here they are, taken straight from Severin’s menu on the web: smoked ham, Babenberger Ossocollo, Bauernspeck, Babenberger Salami and olives. Lots of olives, I must say – certainly more than I have ever seen on a Brettljause and more than most Greek salads contain.

Despite the good appearance (now that I can appreciate it when looking at the photo), the ingredients were very similar in a rather flavorless manner. Perhaps my taste is not too refined to notice the nuances, but apart from the very fat and salty Speck, everything (the Salami included) tasted like ham. An organic ham, perhaps, but still just a ham.

I understand that the dish was intended as a starter, and there was nothing wrong about the olives, but don’t order Severin’s Bioteller expecting a Brettljause – it’s not. You can order a very weird and strong beer with a mango taste, however, and enjoy their seriously nice garden.
